Huxtaburger Chef Daniel Wilson Ranks His Top 5 Burgers

If Lord of the (Burger and) Fries, Auckland-born chef Daniel Wilson, doesn’t reckon a burger’s worth eating – well, put that fucker down and chow on something else.

The legend is one-third of the bunpower behind Melbourne‘s hugely-popular boutique burger chain Huxtaburger, which dishes up artery-choking, saliva-enduring, perfectly-put together burgers in its CBD, Prahan, Collingwood and Hawthorn stores. Wilson also owns Fitzroy eatery Huxtable – a restaurant extension of Huxtaburger.
In short, the guy knows what he’s flipping at that grill, which is why we’re frothing over the July release of his new cookbook, The Huxtaburger Book ($29.95, Hardie Grant), in which he generously shares the secret recipes of more than 20 burgers for us to make at home.

Because we asked him ~really~ nicely, Wilson also agreed to share his top five burgers OF ALL TIME with you, m8s.
Here they are, ranked from ‘really good’ to ‘if it was my last meal of earth…’:
5. Grilled Ham and Pineapple Burger
“I have always had a soft spot for pineapple in a burger. This is excellent with the chargrilled ham steak & rich & smokey chipotle mayo to bring it all together!”

4. Sondra (Organic Tofu Burger)
“We have to keep our non-meat eating friends happy and this is just the one to do that. Crisp tofu with sesame & yuzu mayo and the added crunch & nutrition of crunchy quinoa & pumpkin seeds is sure to keep any vegetation happy!”
3. Clair (Fried Chicken Burger)
“A late addition to the Huxtaburger family. I love having it with cheese & bacon for extra goodness. The slaw is the perfect counterpart for the crispy & juicy fried chicken. Jalapeño mayo rounds it out with a kick!”

2. Denise (Hot & Spicy Deluxe)
“Who doesn’t like jalapeños & sriracha? This is our second most popular burger in the stores.”
ANNNNNNNNNDDDDD NOW THE ULTIMATE……
1. Theo (Double Cheeseburger With Bacon)
“This is the ultimate in meat, cheese & bacon. The bbq sauce really brings it all together with a touch of smoke & spiciness. I thought this is what a growing teenage boy would eat to keep him going.”

Sorry we made you fat 🙁
