Sound the horns, because the custom-built Slovenian oven that’s going to have Sydneysiders‘ salivary glands working overtime by churning out doughnut ice cream cones is officially ready to rumble at its new home, soon-to-be-opened Bondi restaurant and bar Milky Lane.
Owner Christian Avant, whose Curlewis St venue is one of only 4 in Australia to create the traditional Central European dessert authentically, confirmed to PEDESTRIAN.TV that the Trdelnik oven will finally be christened this afternoon after weeks spent getting it through customs.
“Our chef has been working on the pastry combinations for weeks, but today is going to be the first time we’re making the ‘Conut‘ – as we’re calling them here at Milky Lane – with all the right equipment, most importantly the oven,” he said. “It’s very exciting, the christening has been a long time coming.”

The flavour combinations the Milky Lane team are currently testing out include salted-caramel soft serve injected into the cinnamon-sugar coated Trdelnik cones and pimped out with everything from Oreos, strawberries and liquid Nutella to crushed Reese’s Peanut Butter Cups and hot caramel fudge.
All the dough will be made on site, before being wrapped around a cylinder and baked in the rotisserie style oven until it’s good and crunchy / ready for toppings.
“We’ll also be adding a layer of nutella between the layers of pastry, so there’s good stuff in the walls of the thing too,” says Avant. “The sky’s the limit with flavour combinations.”

Avant’s self-proclaimed “House Of Indulgence” will also dish up thick shakes spiked with alcohol, Mac ‘n’ Cheese croquettes, Buttermilk soft shell crab burgers and pretty much everything else you can think of that might clog your arteries.
Milky Lane is currently closed for renovation, with the grand opening expected for mid-April.
