Meal Prep Ideas That’ll Satisfy Both You & Your Picky Significant Other

Have you been feeling a tad uninspired as of late when it comes to cooking in the kitchen, let alone cooking for your partner as well? This adulting thing is hard enough as is, but when a significant other gets thrown into the mix (a picky significant other, mind you) things become double the trouble.

Never fear, kind humans. We’ve asked meal prep queen and all-around life guru Katie Lolas (AKA. @lady.lolas) to lend a hand.

Lunch – Spicy chicken

Breakfast

Vanilla and berry overnight oats

Serves: 1
Ready in: 5 minutes

You will need:

  • 4/5 tbsp of rolled oats
  • 1 tbsp rice malt syrup
  • 1 tsp vanilla protein powder of choice
  • 1 tbsp of chia seeds
  • Enough milk of choice to cover oats once in mason jar
  • Enough berries of choice to fill a quarter of 500ml mason jar

Method

  • Combine oats, milk, chia seeds, rice malt syrup and protein powder into a 500ml mason jar and stir.
  • Top mixture in mason jar with berries.
  • Set in fridge overnight. Repeat for the desired amount of serves.
  • Enjoy in the morning – cold or heat up if desired

Lunch

Spicy chicken

Serves: 4
Ready in: 25 minutes

You will need:

  • Extra virgin olive oil
  • 4 x chicken breasts diced
  • 2 x Oh My Veg Kale, Sweet Potato & Feta packets
  • 2 x bunch broccolini
  • 2 x avocado
  • Salt to taste
  • 4 tbsp spicy chicken seasoning

Method

  • Preheat oven to 180 degrees. Toss the chicken pieces with seasoning and a drizzle of olive oil, then place on a lined baking tray.
  • Arrange the broccolini on a separate lined baking tray, drizzle with olive oil and season with salt to taste.
  • Place both the broccolini and chicken trays in the oven for 12-15 minutes or until the chicken is golden brown and cooked through.
  • When the chicken has 6 minutes left to cook, grab your Oh My Veg Kale, Sweet Potato & Feta mix and cut a 2-3cm opening along the dotted line on the pouch. Place upright inside microwave and heat for 3 ½ minutes. Carefully remove the pouch from microwave, allowing to stand for 2 minutes. Then cut remaining pouch.
  • Portion out chicken, broccolini and sweet potato and feta mix.
  • Enjoy!

Dinner

Mexican salad

Serves: 2
Ready in: 20 minutes

You will need:

  • 500g lean beef mince
  • 1 400g can diced tomatoes
  • 1 packet taco seasoning
  • 2 x Oh My Veg Mexican Street Corn packets
  • 4 cups shredded iceberg lettuce
  • 1 punnet cherry tomatoes cut in halves
  • 150g lite shredded tasty cheese
  • 4 tbsp lite sour cream
  • Extra virgin olive oil

Method

  • Add a drizzle of olive oil to a pan over medium-high heat and add the minced beef. Use a spatula to break up the beef.
  • Add taco seasoning, canned tomatoes and stir to combine. Cook until ground beef is browned. Remove from heat and set aside.
  • Grab your Oh My Veg Mexican Street Corn mix and cut a 2-3cm opening along the dotted line on the pouch. Place upright inside microwave and heat for 3 minutes. Carefully remove the pouch from microwave, allowing to stand for 2 minutes. Then cut remaining pouch.
  • Portion out shredded lettuce, cherry tomatoes, Oh My Veg Mexican Street corn, and ground beef mixture once it has cooled. Top with a sprinkle of light shredded tasty cheese and a tbsp of sour cream.
  • Enjoy!
